Hummus Breakthrough

There has been a BREAKTHROUGH in hummus. I learned it from Cooks Illustrated. You microwave the garbanzos before you make the hummus. Cooks Illustrated recommends canned garbanzos and microwaving for 3 minutes on high. I’m at 5 to 6 minutes.

Don’t ask why. Just do it. (And be careful not to put too much lemon juice in your hummus.)

This discovery is thought by some to explain the presence of certain microwave-like structures found at archaeological sites throughout the Middle East.
